Serves

Preparation time: 20 mins
Cooking time: 25 mins if using a large baking tin,
10 mins for individual tins
50g REGILAIT powdered whole milk (7 tablespoons)
400g of soft, white cheese (40% fat) in a drainer.
100g sugar
Zest of 1 lemon
1 spoonful of honey
60g cornflour
4 eggs |

Without draining, mix the soft, white cheese in with
the REGILAIT powdered whole milk.
Add the cornflour.
Separate the yolks from the egg whites.
Beat the egg yolks and sugar, adding the lemon zest
and honey.
Whip the egg whites into peaks.
Gently stir all the ingredients together and bake in
a greased, floured tin in an oven at 170° for 25
mins. (or 10 mins if using several small baking tins).
Serve with red fruits and a raspberry coulis.
Chefs
tip:
To get perfect peaks, start off by adding a pinch of
salt.
